ABOUT MRS. DAVENPORT'S SWEET POTATO PIE SCHOOL

I've baked my famous traditional sweet potato pies for Thanksgiving and Christmas for over 40 years, just like many other women from the American South.


In 2018, crazy about my Sweet Potato Pies (and he is VERY picky), the love of my life Mr. Davenport, owner and chef of

St. Louis Bistro BBQ, encouraged me to think about offering my pies to the public - an expression of my memory of my own grandmother's recipe, which she most likely got from her mother -  and here we are! 


I bake every sweet potato pie from the freshest, most seasonal, and locally available ingredients whenever possible. Mine are slightly different from what you see in the stores. They are fresher. More real. More flavorful.

I have decided to share my expertise - and to continue a tradition from African-American culture. Here we are. When you learn from me, you are earning your stripes - and a certificate that allows you to brag - and to offer Mrs. Davenport-Style Sweet Potato Pies.

CRUST FROM SCRATCH

Make Your Crust From Scratch

From what flours to use, best and OK brands, including accommodations for allergies and substitutions, to tricks and tips gleaned from other bakers, here is where you will reap the benefits of my own struggle! You don't have to do this, you know. You can march yourself right to the grocery store and buy your favorite pre-made crust. But where's the love? And I found out quickly that my own crust tastes SO much better. Your choice! Adjust the salt and/or baking powder to your liking. Learn for Life!

THE ULTIMATE
SWEET POTATO PIE FILLING

The flavor will take you back in time.

This is the foundation of the Art of Making Sweet Potato Pie. This recipe is the recipe most Americans who know sweet potato pie know and love. Some secrets you may have had NO IDEA were part of it. But you know what: You will learn how to make real sweet potato pie. From choosing the different varieties of yams and sweet potatoes all the way to refrigerating the mixture overnight. This is Step 2 of the 3-Step Process. Done with Love, you will learn some of the history and tradition of Sweet Potato Pie, how it is different from Pumpkin Pie, and hear some memories. (It definitely is different from Pumpkin Pie.) This is Real Old Fashioned Sweet Potato Pie.

FINISHING YOUR SWEET POTATO PIE

The Finishing Touches
& Specialty Recipes

This is where you will learn to put it all together: Your Classic Mrs. Davenport's Sweet Potato Pie which I heard has brought up memories for customers from different parts of the USA, the Daddy's Apple Bit Sweet Potato Pie - a new, delicious variation on the Classic, and the Church Lady Caramel Sweet Potato Pie. Amazing with Caramel Crunch, but not for everybody. This is the final class. Post photos when you're done! When you have completed this, you will receive your Official Certificate of Completion, a listing as an approved baker of Mrs. Davenport's Sweet Potato Pie, and permission to bake these pies

for those you love. And those you serve.
